Sugar mice

  • 1 egg white
  • about 1 lb. confectioner’s sugar
  • food coloring
  • parchment paper
  • string or twine
  • black decorating gel

Beat the egg white until frothy, but not stiff. Using a sieve to prevent clumps, gradually add confectioner’s sugar to egg white, just until a dough forms. Add a few drops of food coloring, mixing until you achieve the color you desire.

Lay a sheet of parchment paper on a flat surface. Cut lengths of string or twine about 3-1/2″ inches long, and lay about 3″ apart on the parchment paper.

Knead the mixture in to a firm dough and divide into 12 – 16 pieces. Roll into oval shapes, then place on top of the string so that about 2-1/2″ to 3″ trails behind the dough. Gently pinch dough to create a mouse: make one end pointed to form a nose, pinch up two small pieces to produce ears. Decorate using black decorating gel; use a toothpick to aid in making whiskers.

Let dry for about 24 hours. Store in an airtight container.
